For 1973, this looks to match the Clipper "M"

I agree it's nearly identical! My watch doesn't have the whale on it though. Also the movement in the advert appears to be different. My watch also has a sunburst dial, do you think that would be stated in the advert too?

Those items should not be an issue; the whale was not on the dials for very long, and the noted 11ANAC# came before the 11AOAC#. The latter movement models added the quick-set date.

There are the same linebook photos without any handwriting.

Hi I have another question: how exactly does the quick-set date function work? I can move the date forward by one day by pulling out the crown maximally and then pushing it back in again. There's not really a 'second crown position' in which I can simply rotate the date forward like on other watches.

There is only the one option to advance the date, which you mentioned by pulling out the crown fully. This movement does not have a second position to quickly change the date.
