Thank you for posting your watch. Definitely a classic. I am not sure where the EW comes from. According to the 1957 Linebook this is a E variant.

I hope this is correct.
I think the variants were adjusted later on, so the "E" may have became the "EW", which might also explain the change from 'Selfwinding' to "Selfwinding Six Adjustments"

Agreed. It appears that the "E" became the "EW" at some point in 1957. The determining factor appears to be a combination of production date and dial text.
1957 Linebook shows as "E" with 3 lines of text under center point of dial . In 1958 -59 Linebook, only "Self Winding" on dial and identified as "EW"

it looks like there are two 1957 Linebooks. Based on the dial configuration I am good with the EW variant designation.
So it seems we have settled on the "EW" designator, which matches the single line of text 'SELFWINDING'
